  • Classic Vanilla Glaze:
  • 4 tablespoons (1/2 stick) unsalted butter

  • 2 cups powdered sugar (10 ounces)

  • 1/4 cup whole milk

  • 1 teaspoon vanilla extract

  • Doughnut cutter or a 3- and 1-inch circle cutter

Directions

  • Prep the Ingredients: Melt 1 stick unsalted butter and warm 1 cup whole milk.
  • In a mixing bowl, combine the warm milk, 1/4 cup granulated sugar, and yeast. Let it sit for 5 minutes until bubbly.
  • Mix the Dough: Whisk in the melted butter and 2 eggs into the yeast mixture.
  • Add 4 cups all-purpose flour and 3/4 teaspoon kosher salt. Knead with a mixer until smooth.
  • Refrigerate the Dough: Shape the dough into a ball, cover, and refrigerate for 8 to 12 hours or let rise at room temperature for 1 1/2 to 2 hours.
  • Roll and Cut the Dough: Roll out the dough and cut into rounds using a doughnut cutter or circle cutter. Let them rise for at least 30 minutes.
  • Make the Glaze: In a saucepan, melt 4 tablespoons unsalted butter. Add powdered sugar, milk, and vanilla extract. Keep warm.
  • Heat the Oil: Heat 2 quarts of canola or peanut oil in a pot to 355 to 365ºF.
