Ingredients

  • 1 1/2 teaspoons granulated garlic

  • 1 1/2 teaspoons kosher salt

  • 1 1/2 teaspoons coarsely ground black pepper

  • 1 beef tri-tip roast (approximately 2 1/2 pounds)

  • 2 tablespoons vegetable or canola oil

Directions

  • Combine 1 1/2 teaspoons granulated garlic, 1 1/2 teaspoons kosher salt, and 1 1/2 teaspoons coarsely ground black pepper in a small bowl.
  • Pat the beef tri-tip roast dry with paper towels. Trim any silver skin from the surface.
  • Rub the garlic mixture all over the tri-tip. Cook immediately or refrigerate uncovered for up to 8 hours.
  • Preheat the oven to 400ºF and position a rack in the middle.
  • If refrigerated, let the tri-tip reach room temperature while the oven heats.
  • Heat 2 tablespoons vegetable oil in a large oven-safe or cast iron frying pan over medium-high heat until shimmering.
  • Place the tri-tip smoother-side down in the pan, pressing it briefly for good contact. Cook undisturbed until well-browned, approximately 3 minutes. Flip the tri-tip.
  • Transfer the pan to the oven and roast until an instant-read thermometer inserted into the thickest part of the tri-tip reads about 125ºF for medium, taking 20 to 30 minutes.
  • Allow the tri-tip to rest on a cutting board for 10 minutes (tent loosely with foil if the kitchen is cool).
  • Cut the roast in half at the center point, then slice each half across the grain into approximately 1/2-inch thick slices.
